Guacamole Chicken and Rice Pita Pockets


The picture isn't very pretty I know. However, these are really tasty. I got the recipe from an ad and everybody liked them.

1 bag Success Brown Rice
1 teaspoon vegetable oil
1 clove garlic, chopped
1/2 pound chicken or turkey
2 tablespoons soy sauce
1/4 teaspoon ground ginger
1 can (8oz) sliced water chestnuts,
drained and chopped
1/3 cup carrot, shredded or grated
1/2 cup cilantro, chopped
4 whole wehate pitas, cut in half
1 pkg (7oz) guacamole

Prepare rice according to package directions. Heat oil in a medium non-stick skillet over medium-high heat. Add garlic and saute 30 seconds. Add chicken and cook until no longer pink, stirring to break-up any clumps. Stir in soy sauce, ginger, water chestnuts, carrots, cilantro and cooked rice. Blend well. Place about 1/3 cup mixture into each pita and top with guacamole. Serves 4.
